Ingredients:  

Main Ingredients

  • 1 lb Ground beef
  • 1 can Corn kernels drained
  • 1 can Black beans drained and rinsed
  • 1 cup Salsa
  • 1 package Cornbread mix prepared according to package instructions
  • 1 cup Cheddar cheese shredded

Instructions: 

  • Preheat oven to 375°F (190°C).
  • In a skillet, cook ground beef over medium heat until browned. Drain excess fat.
  • Add corn, black beans, and salsa to the skillet. Stir to combine and heat through.
  • Transfer beef mixture to a baking dish. Spread prepared cornbread mix over the top.
  • Bake in preheated oven for 25-30 minutes, or until cornbread is golden brown.
  • Sprinkle shredded cheddar cheese on top and bake for an additional 5 minutes, or until cheese is melted.
  • Let cool for a few minutes before serving.

Notes:

Feel free to add some jalapeños for extra spice!
