Ingredients:

  • 1 lb Ground Beef
  • 1 can Enchilada Sauce
  • 1 cup Shredded Cheddar Cheese
  • 1 cup Shredded Monterey Jack Cheese
  • 1 can Black Beans drained and rinsed
  • 1 cup Corn frozen or canned
  • 8 pcs Corn Tortillas

Instructions: 

  • Preheat your oven to 375°F (190°C).
  • In a skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
  • Add the enchilada sauce, black beans, and corn to the skillet. Stir to combine and heat through.
  • In a baking dish, layer half of the corn tortillas, followed by half of the beef mixture, and half of the cheeses. Repeat the layers.
  • Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  • Let the casserole cool for a few minutes before serving. Enjoy!

Notes:

This casserole can be made ahead and refrigerated. Just bake it when you're ready to eat.
