Instructions:
Preheat your oven to 375°F (190°C).
In a skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
Add the enchilada sauce, black beans, and corn to the skillet. Stir to combine and heat through.
In a baking dish, layer half of the corn tortillas, followed by half of the beef mixture, and half of the cheeses. Repeat the layers.
Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
Let the casserole cool for a few minutes before serving. Enjoy!
Notes:
This casserole can be made ahead and refrigerated. Just bake it when you're ready to eat.
