Instructions:

Sauté onions, garlic, and bell peppers until soft.
In a bowl, whisk eggs and milk. Add salt and pepper.
Layer bread, veggies, spinach, and cheese in a baking dish.
Pour egg mixture over layers.
Bake for 45 minutes or until set.
