Instructions:
Preheat your oven to 350°F (175°C).
In a skillet, heat the olive oil over medium-high heat. Add the steak cubes and brown on all sides.
Add the chopped onion and minced garlic to the skillet. Cook until the onion is translucent.
Transfer the steak, onions, and garlic to a casserole dish. Add the carrots, potatoes, beef broth, salt, and pepper. Mix well.
Cover the casserole dish with a lid or aluminum foil. Bake in the preheated oven for 60 minutes, or until the vegetables are tender.
Remove from the oven and let it rest for a few minutes before serving.
Notes:
Feel free to add other vegetables like peas or green beans.
