chopped onion

shredded cheddar cheese

sour cream

crushed Ritz crackers

melted butter
to taste
salt and pepper
Instructions:
Preheat oven to 350°F (175°C).
In a large pot, boil squash and onion until tender. Drain well.
In a mixing bowl, combine squash, onion, cheese, and sour cream. Season with salt and pepper.
Transfer mixture to a baking dish. Top with crushed Ritz crackers and drizzle with melted butter.
Bake for 30-40 minutes, or until the top is golden brown.
Notes:
