Ingredients:  

Main Ingredients

  • 4 cups sliced yellow squash
  • 1 cup chopped onion
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • 1 cup crushed Ritz crackers
  • 1/2 cup melted butter
  • to taste salt and pepper

Instructions: 

  • Preheat oven to 350°F (175°C).
  • In a large pot, boil squash and onion until tender. Drain well.
  • In a mixing bowl, combine squash, onion, cheese, and sour cream. Season with salt and pepper.
  • Transfer mixture to a baking dish. Top with crushed Ritz crackers and drizzle with melted butter.
  • Bake for 30-40 minutes, or until the top is golden brown.

Great for potlucks and family gatherings.
