Ingredients:  

Main Ingredients

  • 4 links Italian sausage sliced
  • 3 large bell peppers sliced (any color)
  • 4 medium potatoes cubed
  • 1 large onion sliced
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp dried oregano

Instructions: 

  • Preheat your oven to 400°F (200°C).
  • In a large baking dish, combine the sliced sausage, bell peppers, potatoes, and onion.
  • Drizzle with olive oil and sprinkle with salt, black pepper, and dried oregano. Toss to coat evenly.
  • Bake in the preheated oven for 45 minutes, stirring halfway through, until the potatoes are tender and the sausage is cooked through.
  • Serve hot and enjoy!

Notes:

Feel free to use any color of bell peppers you like. You can also add other vegetables like zucchini or mushrooms.
