Instructions:
Preheat your oven to 400°F (200°C).
In a large baking dish, combine the sliced sausage, bell peppers, potatoes, and onion.
Drizzle with olive oil and sprinkle with salt, black pepper, and dried oregano. Toss to coat evenly.
Bake in the preheated oven for 45 minutes, stirring halfway through, until the potatoes are tender and the sausage is cooked through.
Serve hot and enjoy!
Notes:
Feel free to use any color of bell peppers you like. You can also add other vegetables like zucchini or mushrooms.
