Ingredients:  

Main Ingredients

  • 1 cup long grain rice
  • 1 cup wild rice
  • 2 cups chicken broth
  • 1 cup sliced mushrooms
  • 1 cup diced onions
  • 1 cup shredded cheese
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper

Instructions: 

  • Preheat oven to 350°F (175°C).
  • In a large mixing bowl, combine long grain rice, wild rice, chicken broth, sliced mushrooms, and diced onions.
  • Add olive oil, salt, and black pepper. Mix well.
  • Transfer the mixture to a baking dish and cover with foil.
  • Bake in the preheated oven for 45 minutes or until the rice is tender.
  • Remove the foil, sprinkle shredded cheese on top, and bake for an additional 10 minutes or until the cheese is melted and bubbly.
  • Let it cool for a few minutes before serving.

Notes:

Feel free to add your favorite vegetables or proteins to make it your own.
