Instructions:
Preheat oven to 350°F (175°C).
In a large mixing bowl, combine long grain rice, wild rice, chicken broth, sliced mushrooms, and diced onions.
Add olive oil, salt, and black pepper. Mix well.
Transfer the mixture to a baking dish and cover with foil.
Bake in the preheated oven for 45 minutes or until the rice is tender.
Remove the foil, sprinkle shredded cheese on top, and bake for an additional 10 minutes or until the cheese is melted and bubbly.
Let it cool for a few minutes before serving.
Notes:
Feel free to add your favorite vegetables or proteins to make it your own.
