Ingredients:  

Main Ingredients

  • 1 cup Quinoa cooked
  • 1 cup Black Beans drained and rinsed
  • 1 cup Corn frozen or canned
  • 1 cup Diced Tomatoes canned
  • 1 cup Shredded Cheese cheddar or your choice
  • 1 tsp Cumin
  • 1 tsp Chili Powder
  • 1 tsp Salt
  • 1 tsp Black Pepper

Instructions: 

  • Preheat your oven to 375°F (190°C).
  • In a large mixing bowl, combine cooked quinoa, black beans, corn, diced tomatoes, cumin, chili powder, salt, and pepper.
  • Transfer the mixture to a baking dish and spread evenly.
  • Top with shredded cheese.
  • Bake in the preheated oven for 45 minutes, or until the cheese is bubbly and golden brown.
  • Let it cool for a few minutes before serving. Enjoy!

Notes:

You can add other vegetables like bell peppers or spinach for extra nutrients.
