Instructions:
Preheat your oven to 375°F (190°C).
In a skillet, cook the ground elk over medium heat until browned. Drain any excess fat.
Add the chopped onions, minced garlic, and bell peppers to the skillet. Cook until the vegetables are tender.
Stir in the diced tomatoes, salt, and black pepper. Let it simmer for about 10 minutes.
Transfer the mixture to a baking dish. Top with shredded cheese.
Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
