Ingredients:

  • 1 lb ground elk
  • 1 cup chopped onions
  • 2 cloves garlic, minced
  • 1 cup chopped bell peppers
  • 1 can diced tomatoes (14.5 oz)
  • 1 cup shredded cheese cheddar or your choice
  • 1 tsp salt
  • 1 tsp black pepper

Instructions: 

  • Preheat your oven to 375°F (190°C).
  • In a skillet, cook the ground elk over medium heat until browned. Drain any excess fat.
  • Add the chopped onions, minced garlic, and bell peppers to the skillet. Cook until the vegetables are tender.
  • Stir in the diced tomatoes, salt, and black pepper. Let it simmer for about 10 minutes.
  • Transfer the mixture to a baking dish. Top with shredded cheese.
  • Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  • Let it cool for a few minutes before serving. Enjoy!

Notes:

This casserole is perfect for a cozy dinner. You can substitute ground elk with ground beef or turkey if you prefer.
