Ingredients:  

Main Ingredients

  • 1 pound Ground Beef
  • 2 medium Zucchini sliced
  • 1 cup Shredded Cheese cheddar or mozzarella
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 1 can Tomato Sauce 15 oz
  • 1 tsp Salt
  • 1/2 tsp Black Pepper

Instructions: 

  • Preheat oven to 375°F (190°C).
  • In a skillet, cook ground beef over medium heat until browned. Drain excess fat.
  • Add chopped onion and minced garlic to the skillet. Cook until onion is translucent.
  • Stir in tomato sauce, salt, and pepper. Simmer for 5 minutes.
  • In a baking dish, layer half of the sliced zucchini, followed by the beef mixture, and then the remaining zucchini.
  • Top with shredded cheese.
  • Bake in preheated oven for 30 minutes, or until zucchini is tender and cheese is bubbly.

Notes:

Let the casserole sit for a few minutes before serving to allow it to set.
