Instructions:
Preheat oven to 375°F (190°C).
In a skillet, cook ground beef over medium heat until browned. Drain excess fat.
Add chopped onion and minced garlic to the skillet. Cook until onion is translucent.
Stir in tomato sauce, salt, and pepper. Simmer for 5 minutes.
In a baking dish, layer half of the sliced zucchini, followed by the beef mixture, and then the remaining zucchini.
Top with shredded cheese.
Bake in preheated oven for 30 minutes, or until zucchini is tender and cheese is bubbly.
Notes:
Let the casserole sit for a few minutes before serving to allow it to set.
