Ingredients:  

Main Ingredients

  • 2 cups cooked chickpeas
  • 1 cup diced tomatoes
  • 1 cup chopped spinach
  • 1 cup shredded cheese
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper

Instructions: 

  • Preheat oven to 375°F (190°C).
  • In a mixing bowl, combine chickpeas, tomatoes, spinach, olive oil, salt, and pepper.
  • Transfer the mixture to a baking dish and top with shredded cheese.
  • Bake for 45 minutes or until the cheese is golden and bubbly.
  • Let it cool for a few minutes before serving.

Notes:

Feel free to add other veggies like bell peppers or zucchini.
