Instructions:
Preheat your oven to 375°F (190°C).
In a skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
Add the taco seasoning to the beef and stir to combine.
In a baking dish, layer the seasoned beef, black beans, corn, and 1 cup of shredded cheese.
Top with an even layer of tater tots.
Bake in the preheated oven for 30 minutes.
Remove from oven and sprinkle the remaining 1 cup of cheese on top. Bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
Let cool for a few minutes before serving.
Notes:
Feel free to add your favorite taco toppings like sour cream, salsa, or jalapeños.
