Ingredients:  

Main Ingredients

  • 2 cups shredded cooked chicken
  • 1 cup sour cream
  • 1 cup enchilada sauce
  • 2 cups shredded cheese cheddar or Mexican blend
  • 8 pieces corn tortillas cut into strips
  • 1 cup diced tomatoes optional
  • 1 cup sliced black olives optional

Instructions: 

  • Preheat your oven to 375°F (190°C).
  • In a mixing bowl, combine the shredded chicken, sour cream, and enchilada sauce.
  • Layer half of the tortilla strips in a baking dish.
  • Spread half of the chicken mixture over the tortillas.
  • Sprinkle one cup of shredded cheese over the chicken mixture.
  • Repeat the layers with the remaining tortillas, chicken mixture, and cheese.
  • Top with diced tomatoes and black olives, if using.
  • Bake in the preheated oven for 30 minutes, or until the cheese is melted and bubbly.
  • Let it cool for a few minutes before serving.

Notes:

Feel free to add more veggies or spices to suit your taste.
