Instructions:
Preheat your oven to 375°F (190°C).
In a mixing bowl, combine the shredded chicken, sour cream, and enchilada sauce.
Layer half of the tortilla strips in a baking dish.
Spread half of the chicken mixture over the tortillas.
Sprinkle one cup of shredded cheese over the chicken mixture.
Repeat the layers with the remaining tortillas, chicken mixture, and cheese.
Top with diced tomatoes and black olives, if using.
Bake in the preheated oven for 30 minutes, or until the cheese is melted and bubbly.
Let it cool for a few minutes before serving.
Notes:
Feel free to add more veggies or spices to suit your taste.
