Ingredients:  

Main Ingredients

  • 1 lb ground beef
  • 1 can corn, drained 15 oz
  • 1 can black beans, drained and rinsed 15 oz
  • 1 can diced tomatoes with green chilies 10 oz
  • 1 can cream of mushroom soup 10 oz
  • 0.5 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 bag frozen tater tots 30 oz
  • Salt and pepper to taste

Instructions: 

  • Preheat oven to 375°F (190°C).
  • In a large skillet, cook ground beef over medium heat until browned. Drain excess fat.
  • Add corn, black beans, diced tomatoes with green chilies, cream of mushroom soup, and sour cream to the skillet. Mix well.
  • Season with salt and pepper to taste.
  • Pour mixture into a 9x13 inch baking dish. Top with shredded cheddar cheese.
  • Arrange tater tots evenly over the top.
  • Bake in preheated oven for 45 minutes, or until tater tots are golden brown and crispy.
