Ritz crackers, crushed

Instructions:
Preheat oven to 350°F (175°C).
In a saucepan, cook the sliced carrots until tender. Drain and place in a mixing bowl.
Mix in the mayonnaise and shredded cheddar cheese with the carrots.
Transfer the mixture to a baking dish.
In a separate bowl, combine the crushed Ritz crackers with the melted butter. Sprinkle over the carrot mixture.
Bake in the preheated oven for 30 minutes or until the top is golden brown.
Notes:
This casserole is a great side dish for any meal. You can also add some herbs or spices to the carrot mixture for extra flavor.
