Ingredients:

  • 4 cups sliced carrots
  • 1 cup mayonnaise
  • 1 cup shredded cheddar cheese
  • 1 cup Ritz crackers, crushed
  • 1/2 cup butter, melted

Instructions: 

  • Preheat oven to 350°F (175°C).
  • In a saucepan, cook the sliced carrots until tender. Drain and place in a mixing bowl.
  • Mix in the mayonnaise and shredded cheddar cheese with the carrots.
  • Transfer the mixture to a baking dish.
  • In a separate bowl, combine the crushed Ritz crackers with the melted butter. Sprinkle over the carrot mixture.
  • Bake in the preheated oven for 30 minutes or until the top is golden brown.

Notes:

This casserole is a great side dish for any meal. You can also add some herbs or spices to the carrot mixture for extra flavor.
