Ingredients:  

Main Ingredients

  • 1 lb Carne Asada cooked and chopped
  • 2 cups Cooked Rice
  • 1 cup Shredded Cheese cheddar or Mexican blend
  • 1 cup Salsa
  • 1 can Black Beans drained and rinsed
  • 1 cup Corn frozen or canned
  • 1 tsp Cumin
  • 1 tsp Chili Powder
  • to taste Salt and Pepper

Instructions: 

  • Preheat your oven to 375°F (190°C).
  • In a large mixing bowl, combine the cooked carne asada, cooked rice, shredded cheese, salsa, black beans, corn, cumin, chili powder, salt, and pepper.
  • Transfer the mixture to a greased baking dish and spread it out evenly.
  • Bake in the preheated oven for 30-40 minutes, until the casserole is heated through and the cheese is melted and bubbly.
  • Let it cool for a few minutes before serving. Enjoy!

Notes:

This casserole can be made ahead and refrigerated. Just bake it when you're ready to eat.
