Ingredients:  

Main Ingredients

  • 4 cups Potatoes, diced
  • 1 cup Cheddar cheese, shredded
  • 1 cup Sour cream
  • 1 tbsp Cajun seasoning
  • 1 cup Green onions, chopped
  • 1 cup Bell pepper, diced
  • 1 cup Milk

Instructions: 

  • Preheat oven to 375°F (190°C).
  • In a large mixing bowl, combine diced potatoes, cheddar cheese, sour cream, Cajun seasoning, green onions, bell pepper, and milk.
  • Transfer the mixture to a greased baking dish.
  • Bake in the preheated oven for 45 minutes, or until the potatoes are tender and the top is golden brown.
  • Let it cool for a few minutes before serving.

Notes:

For extra flavor, add some cooked bacon bits or sausage to the mixture before baking.
