Instructions:

In a large mixing bowl, combine diced potatoes, cheddar cheese, sour cream, Cajun seasoning, green onions, bell pepper, and milk.
Transfer the mixture to a greased baking dish.
Bake in the preheated oven for 45 minutes, or until the potatoes are tender and the top is golden brown.
Let it cool for a few minutes before serving.
Notes:
For extra flavor, add some cooked bacon bits or sausage to the mixture before baking.
