Ingredients:  

Main Ingredients

  • 1 cup wild rice
  • 1 medium butternut squash peeled and cubed
  • 1 cup shredded cheese
  • 1 cup milk
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper

Instructions: 

  • Preheat your oven to 375°F (190°C).
  • Cook the wild rice according to package instructions.
  • In a mixing bowl, combine the cooked wild rice, butternut squash, shredded cheese, milk, olive oil, salt, and black pepper.
  • Transfer the mixture to a baking dish.
  • Bake for 45-50 minutes, or until the squash is tender and the top is golden brown.
  • Let it cool for a few minutes before serving.

Notes:

This casserole can be made ahead and refrigerated. Just reheat before serving.
