Ingredients:  

Main Ingredients

  • 6 large potatoes peeled and cubed
  • 1 cup sour cream
  • 1 cup mayonnaise
  • 1 cup shredded cheddar cheese divided
  • 1/2 cup chopped green onions
  • 1/2 cup cooked bacon crumbled
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions: 

  • Preheat your oven to 375°F (190°C).
  • Boil the potatoes in salted water until tender, about 15 minutes. Drain and set aside.
  • In a large mixing bowl, combine sour cream, mayonnaise, half of the shredded cheddar cheese, green onions, bacon, salt, and pepper.
  • Fold in the cooked potatoes until well coated.
  • Transfer the mixture to a baking dish and top with the remaining shredded cheddar cheese.
  • Bake for 20-25 minutes, or until the cheese is melted and bubbly.
  • Let it cool slightly before serving. Enjoy!

Notes:

This casserole can be made a day ahead and baked just before serving.
