Ingredients:  

Main Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 can black beans drained and rinsed
  • 1 can corn drained
  • 1 can diced tomatoes with green chilies
  • 4 cups frozen hash brown potatoes
  • 2 cups shredded cheddar cheese
  • 1 cup sour cream
  • 0.5 cup chopped green onions

Instructions: 

  • Preheat oven to 350°F (175°C).
  • In a large skillet, cook ground beef over medium heat until browned. Drain excess fat.
  • Add taco seasoning, black beans, corn, and diced tomatoes to the skillet. Stir to combine.
  • In a large mixing bowl, combine hash brown potatoes, sour cream, and 1 cup of shredded cheddar cheese.
  • Spread the hash brown mixture evenly in a greased 9x13 inch baking dish.
  • Pour the beef mixture over the hash brown layer.
  • Top with the remaining 1 cup of shredded cheddar cheese.
  • Bake in preheated oven for 45 minutes, or until the cheese is melted and bubbly.
  • Garnish with chopped green onions before serving.

Notes:

This casserole is a crowd-pleaser and can be made ahead of time. Just reheat before serving.
