black beans, drained and rinsed

corn kernels

egg noodles

shredded cheddar cheese

sour cream

chopped green onions
Salt and pepper to taste
Instructions:
Preheat oven to 350°F (175°C).
Cook egg noodles according to package instructions. Drain and set aside.
In a large skillet, cook ground beef over medium heat until browned. Drain excess fat.
Add taco seasoning, diced tomatoes with green chilies, black beans, and corn to the skillet. Stir to combine and cook for 5 minutes.
In a large mixing bowl, combine cooked egg noodles, beef mixture, sour cream, and 1 cup of shredded cheddar cheese. Mix well.
Transfer the mixture to a greased 9x13 inch baking dish. Top with remaining cheese.
Bake in preheated oven for 20-25 minutes, until cheese is melted and bubbly.
Garnish with chopped green onions before serving.
Notes:
Feel free to add more veggies or adjust the seasoning to your taste.
