Taco Noodle Casserole Recipe

Ingredients:  

Main Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 can diced tomatoes with green chilies
  • 1 can black beans, drained and rinsed
  • 1 cup corn kernels
  • 8 oz egg noodles
  • 2 cups shredded cheddar cheese
  • 1 cup sour cream
  • 0.5 cup chopped green onions
  • Salt and pepper to taste

Instructions: 

  • Preheat oven to 350°F (175°C).
  • Cook egg noodles according to package instructions. Drain and set aside.
  • In a large skillet, cook ground beef over medium heat until browned. Drain excess fat.
  • Add taco seasoning, diced tomatoes with green chilies, black beans, and corn to the skillet. Stir to combine and cook for 5 minutes.
  • In a large mixing bowl, combine cooked egg noodles, beef mixture, sour cream, and 1 cup of shredded cheddar cheese. Mix well.
  • Transfer the mixture to a greased 9x13 inch baking dish. Top with remaining cheese.
  • Bake in preheated oven for 20-25 minutes, until cheese is melted and bubbly.
  • Garnish with chopped green onions before serving.

Notes:

Feel free to add more veggies or adjust the seasoning to your taste.
