Ingredients:  

Main Ingredients

  • 2 cups Zucchini, sliced
  • 2 cups Yellow Squash, sliced
  • 1 cup Cherry Tomatoes, halved
  • 1 cup Onion, chopped
  • 1 cup Bell Pepper, chopped
  • 1 cup Shredded Cheese
  • 1 tsp Salt
  • 1 tsp Black Pepper
  • 2 tbsp Olive Oil

Instructions: 

  • Preheat your oven to 375°F (190°C).
  • In a large mixing bowl, combine all the vegetables.
  • Add olive oil, salt, and pepper. Toss to coat.
  • Transfer the mixture to a baking dish.
  • Sprinkle shredded cheese on top.
  • Bake for 40 minutes or until vegetables are tender.
  • Let it cool for a few minutes before serving.

Notes:

Feel free to add your favorite herbs for extra flavor.
