Salt and pepper to taste
Instructions:
Preheat oven to 350°F (175°C).
In a skillet, cook sausage until browned. Drain excess fat.
In a large bowl, mix sausage, rice, chicken broth, onion, bell pepper, diced tomatoes, garlic powder, salt, and pepper.
Pour mixture into a casserole dish.
Cover with foil and bake for 45 minutes or until rice is tender.
Remove foil and bake for an additional 10 minutes to brown the top.
Notes:
This casserole is great for meal prep and leftovers.
