Ingredients:  

Main Ingredients

  • 1 lb sausage
  • 1 cup rice
  • 2 cups chicken broth
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 1 can diced tomatoes
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions: 

  • Preheat oven to 350°F (175°C).
  • In a skillet, cook sausage until browned. Drain excess fat.
  • In a large bowl, mix sausage, rice, chicken broth, onion, bell pepper, diced tomatoes, garlic powder, salt, and pepper.
  • Pour mixture into a casserole dish.
  • Cover with foil and bake for 45 minutes or until rice is tender.
  • Remove foil and bake for an additional 10 minutes to brown the top.

Notes:

This casserole is great for meal prep and leftovers.
