Instructions:
Preheat your oven to 180°C (350°F).
Boil the potatoes in salted water until tender, then drain and let them cool.
Peel and slice the potatoes and eggs.
Layer half of the potatoes in a baking dish, followed by half of the eggs and sausage. Season with salt and pepper.
Repeat the layers with the remaining potatoes, eggs, and sausage. Top with sour cream.
Bake for 45 minutes, until the top is golden and bubbly.
Notes:
For a richer flavor, you can add some grated cheese on top before baking.
