Instructions:
Preheat your oven to 350°F (175°C).
Grease a baking dish and set aside.
In a mixing bowl, whisk together eggs, milk, vanilla extract, maple syrup, cinnamon, and salt.
Spread half of the bread cubes in the baking dish. Drop spoonfuls of peanut butter over the bread cubes.
Top with the remaining bread cubes. Pour the egg mixture evenly over the bread.
Bake for 45 minutes or until the top is golden brown and the center is set.
Let it cool for a few minutes before serving with additional maple syrup.
Notes:
Great for a weekend breakfast or brunch. Can be prepared the night before and baked in the morning.
