Parmesan Spaghetti Squash Casserole

Ingredients:  

Main Ingredients

  • 1 large spaghetti squash halved and seeded
  • 1 cup Parmesan cheese grated
  • 1 cup marinara sauce
  • 1 cup mozzarella cheese shredded
  • 1 tsp Italian seasoning
  • to taste Salt and pepper

Instructions: 

  • Preheat the oven to 400°F (200°C).
  • Place the spaghetti squash halves cut-side down on a baking sheet. Bake for 30-40 minutes, or until tender.
  • Once cooked, use a fork to scrape out the spaghetti squash strands into a mixing bowl.
  • Add the marinara sauce, half of the Parmesan cheese, Italian seasoning, salt, and pepper to the bowl. Mix well.
  • Transfer the mixture to a baking dish. Top with the remaining Parmesan cheese and mozzarella cheese.
  • Bake for another 10-15 minutes, or until the cheese is melted and bubbly.
  • Let it cool for a few minutes before serving.

Notes:

Feel free to add other veggies or proteins to the casserole for extra flavor and nutrition.
