Ingredients:  

Main Ingredients

  • 1 lb okra, sliced
  • 1 cup onion, chopped
  • 1 cup tomatoes, diced
  • 1 cup cheddar cheese, shredded
  • 1 cup breadcrumbs
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper

Instructions: 

  • Preheat the oven to 375°F (190°C).
  • In a mixing bowl, combine the sliced okra, chopped onion, diced tomatoes, salt, and pepper.
  • Transfer the mixture to a baking dish and spread it out evenly.
  • Sprinkle the shredded cheddar cheese and breadcrumbs on top.
  • Drizzle the olive oil over the top.
  • Bake in the preheated oven for 45 minutes, or until the top is golden brown and crispy.
  • Remove from the oven and let it cool for a few minutes before serving.

Notes:

Feel free to add other vegetables like bell peppers or zucchini.
