Ingredients:  

Main Ingredients

  • 4 fillets White fish such as cod or haddock
  • 1 cup Cherry tomatoes halved
  • 1 cup Kalamata olives pitted and sliced
  • 1 tbsp Olive oil
  • 1 tsp Dried oregano
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 1 tbsp Lemon juice freshly squeezed

Instructions: 

  • Preheat your oven to 375°F (190°C).
  • In a mixing bowl, combine cherry tomatoes, olives, olive oil, oregano, salt, and pepper.
  • Place the fish fillets in a baking dish and top with the tomato and olive mixture.
  • Bake in the preheated oven for 25-30 minutes, or until the fish is cooked through and flakes easily with a fork.
  • Drizzle with lemon juice before serving.

Notes:

Serve with a side of steamed vegetables or a fresh salad for a complete meal.
