Ingredients:  

Main Ingredients

  • 2 cups Mixed legumes (beans, lentils, chickpeas)
  • 1 cup Chopped onions
  • 2 cloves Garlic, minced
  • 1 cup Chopped tomatoes
  • 1 cup Vegetable broth
  • 1 tsp Dried thyme
  • 1 tsp Dried rosemary
  • to taste Salt and pepper
  • 1 cup Grated cheese (optional)

Instructions: 

  • 1. Preheat your oven to 375°F (190°C).
  • 2. In a large pan, sauté the onions and garlic until they are soft.
  • 3. Add the chopped tomatoes, vegetable broth, thyme, and rosemary. Stir well.
  • 4. Add the mixed legumes to the pan and mix everything together. Season with salt and pepper to taste.
  • 5. Transfer the mixture to a casserole dish and spread it out evenly.
  • 6. If using, sprinkle the grated cheese on top.
  • 7. Bake in the preheated oven for 40 minutes, or until the top is golden and bubbly.
  • 8. Let it cool for a few minutes before serving. Enjoy!

Notes:

This casserole can be stored in the fridge for up to 3 days. Reheat before serving.
