Mixed legumes (beans, lentils, chickpeas)

Dried thyme

Instructions:
1. Preheat your oven to 375°F (190°C).
2. In a large pan, sauté the onions and garlic until they are soft.
3. Add the chopped tomatoes, vegetable broth, thyme, and rosemary. Stir well.
4. Add the mixed legumes to the pan and mix everything together. Season with salt and pepper to taste.
5. Transfer the mixture to a casserole dish and spread it out evenly.
6. If using, sprinkle the grated cheese on top.
7. Bake in the preheated oven for 40 minutes, or until the top is golden and bubbly.
8. Let it cool for a few minutes before serving. Enjoy!

This casserole can be stored in the fridge for up to 3 days. Reheat before serving.
