Ingredients:  

Main Ingredients

  • 1 lb Ground Beef
  • 2 cups Green Enchilada Sauce
  • 1 cup Shredded Cheese
  • 10 pieces Corn Tortillas
  • 1 cup Chopped Onion
  • 1 tsp Garlic Powder
  • 1 tsp Cumin
  • 1 tsp Salt
  • 1 tsp Pepper

Instructions: 

  • Preheat oven to 375°F (190°C).
  • In a skillet, cook ground beef over medium heat until browned. Drain excess fat.
  • Add chopped onion, garlic powder, cumin, salt, and pepper to the skillet. Cook until onions are soft.
  • In a baking dish, layer corn tortillas, beef mixture, enchilada sauce, and shredded cheese. Repeat layers.
  • Bake in preheated oven for 30 minutes or until cheese is bubbly and golden.
  • Let cool for a few minutes before serving.

Notes:

Feel free to add more veggies like bell peppers or spinach for extra nutrition.
