Instructions:
Preheat oven to 375°F (190°C).
In a skillet, cook ground beef over medium heat until browned. Drain excess fat.
Add chopped onion, garlic powder, cumin, salt, and pepper to the skillet. Cook until onions are soft.
In a baking dish, layer corn tortillas, beef mixture, enchilada sauce, and shredded cheese. Repeat layers.
Bake in preheated oven for 30 minutes or until cheese is bubbly and golden.
Let cool for a few minutes before serving.
Notes:
Feel free to add more veggies like bell peppers or spinach for extra nutrition.
