Instructions:
Preheat oven to 350°F (175°C).
In a skillet, cook ground beef over medium heat until browned. Drain excess fat.
Add taco seasoning, diced tomatoes, and kidney beans to the skillet. Stir to combine and simmer for 5 minutes.
In a baking dish, layer half of the Fritos, followed by the beef mixture, and then half of the cheese. Repeat layers.
Bake in preheated oven for 20-25 minutes, until cheese is melted and bubbly.
Remove from oven and let cool for a few minutes before serving.
Notes:
Feel free to top with sour cream, jalapeños, or green onions for extra flavor.
