Ingredients:

  • 4 cups zucchini, chopped
  • 2 cups corn kernels
  • 1 cup shredded cheese
  • 1 cup diced tomatoes
  • 1 cup onion, chopped
  • 2 tbsp olive oil
  • 1 tsp salt
  • 0.5 tsp black pepper

Instructions: 

  • Preheat your oven to 375°F (190°C).
  • In a mixing bowl, combine zucchini, corn, tomatoes, onion, olive oil, salt, and pepper.
  • Transfer the mixture to a baking dish and top with shredded cheese.
  • Bake for 45 minutes or until the top is golden and bubbly.
  • Let it cool for a few minutes before serving.
