Instructions:
Preheat your oven to 350°F (175°C).
Boil the potatoes in a large pot of salted water until tender, about 15 minutes. Drain well.
In a large bowl, whip the potatoes with a mixer until smooth. Add milk, butter, sour cream, salt, and pepper. Mix until well combined.
Spread the potato mixture into a greased casserole dish. Top with shredded cheddar cheese.
Bake in the preheated oven for 30 minutes, or until the cheese is melted and bubbly.
Garnish with chopped chives before serving.
Notes:
For a twist, try adding some garlic powder or roasted garlic to the potato mixture.
