Ingredients:  

Main Ingredients

  • 2 cups Corn kernels
  • 2 cups Black beans cooked
  • 2 cups Butternut squash diced
  • 1 cup Cheddar cheese shredded
  • 1 cup Onion chopped
  • 2 cloves Garlic minced
  • 1 tsp Cumin
  • 1 tsp Chili powder
  • to taste Salt and pepper

Instructions: 

  • Preheat your oven to 375°F (190°C).
  • In a large mixing bowl, combine the corn, black beans, butternut squash, onion, garlic, cumin, and chili powder. Season with salt and pepper to taste.
  • Transfer the mixture to a baking dish and spread it out evenly.
  • Sprinkle the shredded cheddar cheese on top.
  • Bake in the preheated oven for 40 minutes, or until the squash is tender and the cheese is bubbly and golden brown.
  • Let it cool for a few minutes before serving.

This dish is inspired by the traditional Native American Three Sisters agricultural technique, which grows corn, beans, and squash together.
