Ingredients:  

Main Ingredients

  • 4 cups rhubarb, chopped
  • 1 cup sugar
  • 1 cup flour
  • 1 tsp baking powder
  • 1/2 cup butter, melted
  • 1 cup milk

Instructions: 

  • Preheat oven to 350°F (175°C).
  • In a mixing bowl, combine rhubarb and sugar. Let sit for 10 minutes.
  • In another bowl, mix flour and baking powder. Add melted butter and milk, stir until combined.
  • Pour rhubarb mixture into a baking dish. Pour batter over the top.
  • Bake for 45 minutes or until golden brown.

Notes:

Serve warm with a scoop of vanilla ice cream.
