Ingredients:  

Main Ingredients

  • 1 cup quinoa rinsed
  • 2 cups water
  • 1 cup pizza sauce
  • 1 cup shredded mozzarella cheese
  • 1 cup sliced pepperoni
  • 1 tsp dried oregano
  • 1 tsp dried basil

Instructions: 

  • Preheat oven to 375°F (190°C).
  • Cook quinoa in water according to package instructions.
  • In a mixing bowl, combine cooked quinoa, pizza sauce, half of the mozzarella cheese, pepperoni, oregano, and basil.
  • Transfer the mixture to a baking dish and top with the remaining mozzarella cheese.
  • Bake for 20-25 minutes, until the cheese is melted and bubbly.
  • Let it cool for a few minutes before serving.

Notes:

Feel free to add your favorite pizza toppings to this casserole.
