pizza sauce

shredded mozzarella cheese

sliced pepperoni

dried oregano

Instructions:
Preheat oven to 375°F (190°C).
Cook quinoa in water according to package instructions.
In a mixing bowl, combine cooked quinoa, pizza sauce, half of the mozzarella cheese, pepperoni, oregano, and basil.
Transfer the mixture to a baking dish and top with the remaining mozzarella cheese.
Bake for 20-25 minutes, until the cheese is melted and bubbly.
Let it cool for a few minutes before serving.
Notes:
Feel free to add your favorite pizza toppings to this casserole.
