Ingredients:

  • 4 cups potatoes, peeled and cubed
  • 1 cup sour cream
  • 1 cup shredded Pepper Jack cheese
  • 1 cup shredded cheddar cheese
  • 1/2 cup chopped green onions
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions: 

  • Preheat your oven to 375°F (190°C).
  • In a large mixing bowl, combine the potatoes, sour cream, Pepper Jack cheese, cheddar cheese, green onions, salt, and black pepper.
  • Transfer the mixture to a greased baking dish.
  • Bake in the preheated oven for 45 minutes, or until the top is golden and bubbly.
  • Let it cool for a few minutes before serving.

Notes:

Feel free to add some cooked bacon bits for extra flavor.
