Ingredients:  

Main Ingredients

  • 6 cups Potatoes, peeled and cubed
  • 1 cup Sour cream
  • 1 cup Cheddar cheese, shredded
  • 1 can Cream of chicken soup 10.5 oz can
  • 1 cup Onion, finely chopped
  • 1 cup Cornflakes, crushed
  • 1/4 cup Butter, melted
  • to taste Salt and pepper

Instructions: 

  • Preheat oven to 350°F (175°C).
  • In a large mixing bowl, combine potatoes, sour cream, cheddar cheese, cream of chicken soup, and onion. Mix well.
  • Season with salt and pepper to taste.
  • Transfer the mixture to a greased baking dish.
  • In a small bowl, mix crushed cornflakes with melted butter. Sprinkle over the potato mixture.
  • Bake in the preheated oven for 45 minutes, or until the top is golden brown and the casserole is bubbly.
  • Let it cool for a few minutes before serving.

Notes:

This casserole is a hit at any gathering. Feel free to add more cheese if you like it extra cheesy!
