Ingredients:

  • 2 cups Organic Quinoa
  • 1 cup Organic Broccoli chopped
  • 1 cup Organic Carrots sliced
  • 1 cup Organic Cheddar Cheese shredded
  • 2 cups Organic Vegetable Broth
  • 1 tsp Salt
  • 1 tsp Black Pepper

Instructions: 

  • Preheat your oven to 375°F (190°C).
  • In a mixing bowl, combine quinoa, broccoli, carrots, and vegetable broth.
  • Season with salt and black pepper.
  • Transfer the mixture to a baking dish and top with shredded cheddar cheese.
  • Bake for 45 minutes or until the top is golden and bubbly.
  • Let it cool for a few minutes before serving.
