Ingredients:  

Main Ingredients

  • 6 medium russet potatoes peeled and cubed
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked bacon chopped
  • 1/4 cup green onions sliced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions: 

  • Preheat your oven to 375°F (190°C).
  • Boil the cubed potatoes in salted water until tender, about 15 minutes. Drain and transfer to a mixing bowl.
  • Mash the potatoes with sour cream, salt, and pepper until smooth.
  • Fold in half of the shredded cheese, bacon, and green onions.
  • Transfer the mixture to a baking dish and top with the remaining cheese.
  • Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  • Garnish with additional green onions and serve hot.

Notes:

This casserole is perfect for family dinners or potlucks. You can also add other toppings like chives or a dollop of butter for extra flavor.
