Instructions:
Preheat your oven to 350°F (175°C).
Grease a baking dish with a little butter or cooking spray.
Cut the bread into cubes and place them in the baking dish.
In a mixing bowl, whisk together the eggs, milk, Greek yogurt, vanilla extract, cinnamon, and maple syrup.
Pour the mixture over the bread cubes, making sure all pieces are well coated.
Bake in the preheated oven for 45 minutes, or until the top is golden brown and the center is set.
Let it cool for a few minutes before serving. Enjoy!

This casserole can be prepared the night before and baked in the morning.
