Ingredients:  

Main Ingredients

  • 1 lb Ground Beef
  • 1 packet Taco Seasoning gluten-free
  • 1 cup Salsa
  • 1 cup Shredded Cheddar Cheese
  • 2 cups Crushed Tortilla Chips gluten-free
  • 1 cup Black Beans drained and rinsed
  • 1 cup Corn Kernels drained
  • 1 cup Diced Tomatoes drained

Instructions: 

  • Preheat your oven to 350°F (175°C).
  • In a skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
  • Add the taco seasoning and salsa to the beef. Stir well to combine.
  • In a baking dish, layer half of the crushed tortilla chips, followed by the beef mixture, black beans, corn, diced tomatoes, and half of the shredded cheese.
  • Repeat the layers with the remaining ingredients, finishing with a layer of shredded cheese on top.
  • Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  • Let the casserole cool for a few minutes before serving. Enjoy!

This gluten-free taco casserole is perfect for a family dinner or a potluck. Feel free to add your favorite toppings like sour cream, guacamole, or chopped cilantro.
