Ingredients:  

Main Ingredients

  • 1 lb ground beef
  • 1 cup chopped onion
  • 1 cup chopped bell pepper
  • 2 cups shredded cheese
  • 1 can diced tomatoes (14.5 oz)
  • 1 can corn (15 oz)
  • 1 cup sour cream
  • 1 package egg noodles (12 oz)

Instructions: 

  • 1. Preheat oven to 350°F (175°C).
  • 2. Cook egg noodles according to package instructions. Drain and set aside.
  • 3. In a skillet, cook ground beef over medium heat until browned. Drain excess fat.
  • 4. Add chopped onion and bell pepper to the skillet. Cook until vegetables are tender.
  • 5. Stir in diced tomatoes and corn. Simmer for 5 minutes.
  • 6. In a large bowl, combine cooked egg noodles, beef mixture, sour cream, and 1 cup of shredded cheese.
  • 7. Transfer mixture to a baking dish. Top with remaining cheese.
  • 8. Bake in preheated oven for 20 minutes, or until cheese is melted and bubbly.

Notes:

Feel free to add more vegetables or spices to suit your taste.
