Instructions:
1. Preheat oven to 350°F (175°C).
2. Cook egg noodles according to package instructions. Drain and set aside.
3. In a skillet, cook ground beef over medium heat until browned. Drain excess fat.
4. Add chopped onion and bell pepper to the skillet. Cook until vegetables are tender.
5. Stir in diced tomatoes and corn. Simmer for 5 minutes.
6. In a large bowl, combine cooked egg noodles, beef mixture, sour cream, and 1 cup of shredded cheese.
7. Transfer mixture to a baking dish. Top with remaining cheese.
8. Bake in preheated oven for 20 minutes, or until cheese is melted and bubbly.
Notes:
Feel free to add more vegetables or spices to suit your taste.
