Instructions:
Preheat your oven to 400°F (200°C).
In a mixing bowl, combine the potatoes, onion, bell pepper, olive oil, Cajun seasoning, salt, and black pepper.
Transfer the mixture to a baking dish and spread it out evenly.
Place the sliced Cajun sausage on top of the potato mixture.
Bake in the preheated oven for 45 minutes, or until the potatoes are tender and the sausage is cooked through.
Remove from the oven and let it cool for a few minutes before serving.
Notes:
Feel free to add more veggies like zucchini or carrots.
