Ingredients:  

Main Ingredients

  • 2 cups Shredded birria beef
  • 1 cup Cooked rice
  • 1 cup Black beans drained and rinsed
  • 1 cup Corn kernels fresh or frozen
  • 1 cup Shredded cheese cheddar or Mexican blend
  • 1 cup Birria sauce
  • 1 medium Onion diced
  • 2 cloves Garlic minced
  • 1 tbsp Olive oil
  • 1 tsp Cumin
  • 1 tsp Chili powder
  • to taste Salt and pepper

Instructions: 

  • Preheat your oven to 375°F (190°C).
  • In a large mixing bowl, combine the shredded birria beef, cooked rice, black beans, corn, diced onion, minced garlic, cumin, chili powder, salt, and pepper.
  • Stir in the birria sauce until everything is well coated.
  • Transfer the mixture to a greased baking dish.
  • Sprinkle the shredded cheese evenly over the top.
  • Bake in the preheated oven for 30-35 minutes, or until the cheese is melted and bubbly.
  • Let the casserole cool for a few minutes before serving.

Notes:

Feel free to add your favorite toppings like sour cream, avocado, or fresh cilantro.
