Ingredients:

  • 4 cups sliced squash
  • 1 cup chopped onion
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • 1 can cream of mushroom soup
  • 1 cup French fried onions

Instructions: 

  • Preheat oven to 350°F (175°C).
  • In a large mixing bowl, combine sliced squash, chopped onion, shredded cheddar cheese, sour cream, and cream of mushroom soup. Mix well.
  • Transfer the mixture to a baking dish and spread evenly.
  • Bake in the preheated oven for 30 minutes.
  • Remove from the oven and sprinkle French fried onions on top.
  • Return to the oven and bake for an additional 15 minutes, or until the onions are golden brown.
  • Serve hot and enjoy!

Notes:

This casserole is perfect for family dinners or potlucks. You can also add some cooked chicken or turkey for a heartier meal.
