Ingredients:  

Main Ingredients

  • 8 slices Paleo bread
  • 6 Eggs
  • 1 cup Coconut milk
  • 1 tsp Vanilla extract
  • 1 tsp Cinnamon
  • 2 tbsp Maple syrup
  • 1 pinch Salt

Instructions: 

  • 1. Preheat your oven to 350°F (175°C).
  • 2. Grease a baking dish with coconut oil.
  • 3. Cut the paleo bread into cubes and place them in the baking dish.
  • 4. In a mixing bowl, whisk together the eggs, coconut milk, vanilla extract, cinnamon, maple syrup, and salt.
  • 5. Pour the mixture over the bread cubes, making sure all pieces are well-coated.
  • 6. Bake in the preheated oven for 45 minutes, or until the top is golden brown and the casserole is set.
  • 7. Let it cool for a few minutes before serving. Enjoy!

Notes:

This casserole can be prepared the night before and baked in the morning for a quick and easy breakfast.
