Instructions:
1. Preheat your oven to 350°F (175°C).
2. Grease a baking dish with coconut oil.
3. Cut the paleo bread into cubes and place them in the baking dish.
4. In a mixing bowl, whisk together the eggs, coconut milk, vanilla extract, cinnamon, maple syrup, and salt.
5. Pour the mixture over the bread cubes, making sure all pieces are well-coated.
6. Bake in the preheated oven for 45 minutes, or until the top is golden brown and the casserole is set.
7. Let it cool for a few minutes before serving. Enjoy!
