Ingredients:  

Main Ingredients

  • 1 lb Ground beef
  • 1 can Black beans drained and rinsed
  • 1 can Corn drained
  • 1 cup Salsa
  • 2 cups Shredded cheese Mexican blend
  • 6 pieces Flour tortillas cut into strips
  • 1 tsp Cumin
  • 1 tsp Chili powder
  • to taste Salt and pepper

Instructions: 

  • Preheat your oven to 375°F (190°C).
  • In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
  • Add the black beans, corn, salsa, cumin, chili powder, salt, and pepper to the skillet. Stir to combine and let it simmer for 5 minutes.
  • In a baking dish, layer half of the tortilla strips, followed by half of the beef mixture, and then half of the shredded cheese. Repeat the layers.
  • Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  • Let it cool for a few minutes before serving. Enjoy!

Notes:

You can add some chopped cilantro and a dollop of sour cream on top for extra flavor.
