Ingredients:

  • 1 lb Ground Beef
  • 1 can Black Beans drained and rinsed
  • 1 can Corn drained
  • 1 cup Salsa
  • 2 cups Shredded Cheddar Cheese
  • 1 package Taco Seasoning
  • 1 cup Sour Cream

Instructions: 

  • Preheat your oven to 375°F (190°C).
  • In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
  • Add the taco seasoning to the beef and stir well.
  • In a large mixing bowl, combine the beef mixture, black beans, corn, and salsa.
  • Transfer the mixture to a baking dish and spread evenly.
  • Top with shredded cheddar cheese.
  • Bake in the preheated oven for 30 minutes, or until the cheese is melted and bubbly.
  • Remove from the oven and let it cool for a few minutes before serving.
  • Serve with a dollop of sour cream on top.

Notes:

This casserole is perfect for a family dinner or a potluck. You can also add some chopped jalapeños for extra heat.
