Ingredients:  

Main Ingredients

  • 2 cups Zucchini, sliced
  • 2 cups Bell Peppers, chopped
  • 1 cup Cherry Tomatoes, halved
  • 1 cup Onion, chopped
  • 2 cloves Garlic, minced
  • 1 cup Marinara Sauce
  • 1 cup Mozzarella Cheese, shredded
  • 1 tsp Dried Oregano
  • 1 tsp Salt
  • 1/2 tsp Black Pepper

Instructions: 

  • Preheat your oven to 375°F (190°C).
  • In a large mixing bowl, combine zucchini, bell peppers, cherry tomatoes, onion, and garlic.
  • Add marinara sauce, dried oregano, salt, and black pepper. Mix well.
  • Transfer the mixture to a baking dish and spread it out evenly.
  • Sprinkle shredded mozzarella cheese on top.
  • Bake in the preheated oven for 35-40 minutes, until the vegetables are tender and the cheese is golden brown.
  • Let it cool for a few minutes before serving. Enjoy!

Notes:

You can add other vegetables like eggplant or mushrooms if you like.
